3 apples, cored
3 ripe pears, cored
1 tablespoon maple syrup
2 tablespoons of cinnamon
splash of lemon juice
Pinch of sea salt
1/2 teaspoon vanilla essence
Blend 2 apples and 1 pear with the maple syrup, cinnamon, vanilla and salt until pureed.
Finely chop the remaining fruit, splash with a little lemon juice and mix with the puree and place the filling in a crumble dish and keep in the fridge to set while you make the crumble.  


1 cups almond flour

1 cups ground pecans

1 tbs mayple syrup

2 tbsp melted coconut oil

Place all the nuts, agave or maple syrup and melted coconut butter into the food processor and pulse until large chunks remain (so the consistency is like crumble).

Take the filling out of the fridge.

Place the crumble over the filling so that it covers it evenly.

Serve with vanilla cashew ice cream (optional) x
