BAKED APPLE PUDDING

Heres a delicious autumnal recipe to boost digestion and feel nourished. 

10-12 cooking apples (chopped into quarters)

Add 1 tbsp cinnamon powder

Cup of raisins

Pinch of salt

4 tbsp of coconut oil1/2 cups of broken roasted nuts for serving (optional)

Oat or dairy cream for serving Peel the apples with a potato peeler and slice out the cores, place them in the baking dish
Mix all ingredients together and even out the surface with the back of a tablespoon.  

Then bake on a highish shelf in the oven for exactly  30-40 minutes (when the apples are golden). 

This pudding is equally good served warm or cold – either way, it’s nice with some chilled pouring oat cream (or dairy cream). 

Once cooled, it will keep in the fridge for 3 or 4 days.

Serve in a bowl with the cream of your choice.
