I usually serve this slice on the second day of the Cleanse Retreats,

everyone loves it!

You can use different dry fruit and nuts, it’s really nice with pecans too.

For decoration you can use seasonal edible flowers and some inulin (great prebiotic and looks like icing sugar).

For about 14 slices you’ll need

2 tsp golden flax seeds (soaked in 1/2 cup of water for an hour)

200 g pitted dates (soak in 150 ml boiling water and cover)

3 ripe bananas

150 g raisins

100 g walnut

50 g almonds

100 g polenta

2 tsp baking powder

1/2 tsp ginger powder

1 tsp cinnamon powder

pinch of sea/mountain salt (just to make sure you get some minerals:)

Heat oven to 180C/fan 160C/gas 4. Line a baking paper on an over tray.

Place in a food processor the flax seeds and dates with the water you’ve soaked them in, bananas, raising and blend for a minute or two.

Place in a big bowl, add all the rest of the ingredients and fold into the cake mix.

Tip into the baking tray, evenly spread it (you want about an inch high), slice it before baking.

Bake for 50 minutes.

That’s it!

On cold days you can serve it with golden milk , in warm days you can brew nettle, cardamom and peppermint tea.
