I just love how nature provide us with exactly what we need at the right time.
At the spring when our liver needs support and our body is ready to get rid of stagnation and kick in the detoxification process nature provide us with my favorite super food- nettle, and best liver food wild garlic.
Those two help the body to purify our blood and flush toxins out.
I’ve choose quinoa as it’s still cold so protein is very grounding, but please get locally grown quinoa, the Peruvian have very little quinoa for themselves as most of it imported…
1 cup nettle (pick the five top leaves with rubber gloves)
2 handfuls wild garlic
2 tbsp ghee/olive oil
1 cup quinoa (better is soaked for 1-3 hrs and washed)
5 cups of water
1 litre hot vegetable stock
1 inch ginger root
1/2 tsp turmeric powder/root
sea salt and black pepper
lime (for serving)
Melt the ghee in a pan. Add all ingredients, bring to boil (no need in chopping), then cover and simmer for 10 minutes.
When it cools blend the soup will smooth, just before serving add some lime/lemon.
